USDA Beef Carcass Grading - Quality Grading
At Ohio Signature Beef we only allow the best beef into our program. To assure our valued consumers that they are consuming a high quality product, we require all of our beef to be graded by the United States Department of Agriculture (USDA). If the beef does not pass our strict standards it is not allowed into our program. This ensures you will always enjoy a high quality cut of Ohio Signature Beef.

The quality grading of beef carcasses determines the palatability, or eating experience, of the beef. There are two factors that are taken into account when beef carcasses are quality graded. They include marbling and carcass maturity. Both topics have been covered in previous web pages (Marbling and Beef Carcass Maturity in Relation to Tenderness). Once the USDA grader has determined the marbling score and the maturity of the carcass, the two are combined resulting in the Quality Grade of the carcass. Below is a table that shows how the USDA graders determine the quality grade.
